Many people consider the raw vegetable salad to be optional or the least important part of the meal or even just an ‘appetizer’ before the main meal.  This popular belief is flawed because a good salad has all the nutritional components required by our bodies and this claim cannot be made for any cooked food.  There are many known and unknown nutritional components in a raw vegetable salad that makes it so valuable and necessary for good health.  Many studies have found that heat from cooking destroys all enzymes and most vitamins!!!  Additionally, while protein and minerals are altered by heat to a form that is not usable by the human body, the result could be considered a ‘death meal’.  When protein is heated or consumed in excess, it is harmful to the body and must be eliminated.  Excess protein feeds cancer cells, burdens the liver, is stored as fat, and causes numerous other problems.  While it is very common to eat vegetables cooked or steamed, you can rest assured that you will receive far more nutritional value when they are eaten raw. 

What would be some of the benefits of having a large raw vegetable salad as the ‘main meal’? Here are a few things to consider:

1.     They are easily digested by the body.

2.     Raw vegetables are extremely rich in minerals, vitamins, trace elements, enzymes and natural sugars.

3.     Raw vegetables will help stabilize and normalize your natural bodily functions.

At this point, you may be starting to agree with the idea that raw vegetable salads should be a regular part of your daily diet, however, you may be wondering how you will get your protein intake from salads.  Raw vegetables are an ideal source of protein, partly because this protein has not been altered by heat and amount of protein is not excessive that the body would not be able to digest it resulting in putrefaction.  The result of this digestion would bring healthy vitamins and minerals to each cell.  Raw vegetables contain their own digestive enzymes and these are the life-force that help nutrients work in the body and they are also among the first lost to heat or long storage.  Raw fruits and vegetables are composed of between 70 and 90 percent water.  Our bodies lose almost four-and-a-half liters of water a day which must be replaced.  The water from raw vegetables should account for most of this replacement.

Aren’t these strong facts in favor of eating more raw vegetable salads?  Let me add one last interesting fact, people are more likely to have deficiencies in vitamins, minerals, and enzymes than a protein deficiency.  Let us stop and think carefully about how we have been treating our bodies and if we may have nutritional deficiencies as a result of our eating habits.  Remember, eat foods that are alive because these are the foods that promote LIFE!!!
